First! Take a frying pan and put a little water in it, your chicken, unions, saffron, curcuma(gurkmeja) and salt. Put a lid on it and let it steam cook for about and hour on not so hight temperature. At the end just paste the chicken with its on juice, cuz I usually take off the skin and we don't eat it. Serve this with steamed basmati rice and a side salad, pickles Or just as it is!! The meat melts in your mouth and all the flavours and juice is kept in the chicken!!!
(uncooked, you can see the amount of water)
Second! If you have any Asian spices or sauces, mix it all in a bowl with some oil, and put some lemon leaves (that's in the second pic, U can find it in any Asian food store. Buy a bag and put it in the freezer and take out a couple of leaves when ever U need it. We always do the same with fresh small chili fruits). Just poor it in the chicken and put a aluminum foil on it and in the oven! At the end take of the foil and paste is with its own juice and let it cook in the oven without the foil so it will get an crispy surface! The juice under it is a perfect sauce and the crispy chicken is DELICIOUS with that exotic spell of lemon leaves!! Serve it with what ever you like, we chose rice and some yoghurt as a side thing.
(once again "uncooked" pics)
There you go, cheap, easy, yummy and something you do not have to stand next to through the whole cooking period.
Much Love, Nazanin!
